Paleo Baked Honey Mustard Chicken

This is a simple and easy way to make perfectly baked chicken. All you need is a good Deep covered baker to get the job done. This meal is Paleo, Gluten- Free,
an easy 1 pot meal to feed a busy family.

Baked Chicken is so delicious and really easy to make. I find that on days where I am pressed to get a lot done at home I can still pull off an awesome meal full of nutrients and flavor for my family with out spending a lot of time in the kitchen, and making a huge mess. Basically this one pot meal can feed a family of four without a problem. However depending on your family size you may have to increase the size of your baking dish. Ok, so all you need besides a sturdy baking dish is some High Quality Organic Chicken thighs, and drumsticks are my choice, a fresh bunch of Flat leaf Parsley, Brussels Sprouts, 1 small yellow onion, and a few other seasonings/pantry items and you are ready to have dinner on the table.
I might add however you will need to be home for a few hours while this slowly cooks. I am sure that you can cook this in a slow cooker as well if staying home is not an option for you.

If you are like me than you will have all that you see above already stocked in your spice section. Nutritional Yeast may be the only item that you don't have. Let's take a second to discuss why I love Nutritional Yeast so much....
Although the name doesn't sound so appealing, I assure you the taste is great! Besides being tasty, it provides a wealth of vitamins, minerals and protein that almost anyone—from Paleo to vegans can enjoy. Don't confuse nutritional yeast with baker's yeast, they are completely different! Nutritional Yeast is a complete protein, meaning that among the 18 amino acids it contains, nine are essential ones that your body cannot produce. Which is why adding Nutritional Yeast to your diet and your children's diet is yet another clever why to add more vitamins and minerals to their diets without them knowing the wiser. This is a must have in my kitchen!!
You can find this now in many food stores, especially Whole Foods, but now even Stop n Shop has it in there natural food section. Here is a link to amazon where you can get it shipped to your house if you are ready to start stocking this in your kitchen!
Ok, So let's get this recipe underway.....
Here is what you will need:
4 Organic Chicken Thighs / 4 Drumsticks
Roughly a 1 lb of Brussel Sprouts
1 small Yellow Onion
Handful of Flat Leaf Parsley
Ghee - to Coat Chicken
Black Pepper - to lightly cover
Garlic Powder - to lightly cover
Sea Salt - to lightly cover
Oregano - to lightly cover
1/2 Cup bone broth

Method:
Pre-heat over to 325*
1. Chop the yellow onion in rough slices toss in the bottom of the baking dish.
2. Cut the brussel sprouts in half length wise, and place some on the bottom of the baking dish, and then reserve some for the top of the chicken. Toss in Bone Broth.
3. Coat the chicken with grass fed ghee ( both sides), then sprinkle lightly all the seasoning, pepper, salt, oregano, garlic, nutritional yeast.
4. Place chicken in the baking dish on top of the onion and place more brussel sprouts and handful of chopped parsley on top.
5. Dump a nice amount of Primal Kitchen Honey Mustard all over and place in the oven covered for the first 1hr 30mins to 2 hours then let the chicken cook uncovered to get the beautiful crispy skin. This will vary, mine took in total 3hrs 30 mins. Once the meat starts to fall off the bone then your chicken is fully cooked and tender! Serve with a fresh sprig of parsley.

I promise that this dish is so worth the wait. The preparation is so quick that I am able to do a lot around the house, and tend to Phoenix while this slowly cooks to perfection. I am not slaving in the kitchen with a million ingredients to get this meal ready for my family to eat. A true 1 Pot meal, that is both Delicious and meets my High Standard of Health!
