Artichokes on Horse Back

Paleo, Gluten Free, Dairy Free, Whole30 Approved

Now that we are back on Long Island again I often think about my life living in Brooklyn walking the streets daydreaming along my journey to the L train. I would pass 5 Leaves restaurant. It was always packed out with hipsters, foodies, and young families awaiting a table for this tiny little restaurant. It almost looked like a dive, but that's the appeal, isn't it?! If you could manage to get a table it was like winning the golden ticket. The smell of the rosemary truffle fries made my heart skip a beat.

There was one thing on the menu that always captivated me but I simply didn't eat it because I was a vegan. Dates wrapped in Bacon, they were called Dates on Horse Back. The smell was heavenly. My mouth would drool as I watched everyone else eat them.

So in a tribute to my beautiful Greenpoint, Brooklyn days I created this simple Artichoke on Horse Back dish. It is Paleo and Whole30 Approved - ***if you use the Primal Kitchen Avocado Oil as a dipping sauce it will no longer be Whole30approved, as this feature is completely optional. Primal Kitchen is a fantastic Paleo Brand of dressings, marinades, and other fine quality snacks.

Lets talk about Fat for a moment!

For so long we were told to stay away from fat, that fat will make you fat. But that is soooo far from the truth. So much research as shown that high quality fat such as avocados, egg yolks, olives, extra virgin olive oil, duck fat, pork fat, almonds, to name a few all help are bodies sustain health, and when consumed in our daily diet they help us maintain body weight.

The truth is Fat makes you Thin! This is awesome, because what is better then good fat!

Did you know that artichokes are a super healthy vegetable to? They are low in cholesterol, while being a rich source of fiber, vitamins and minerals. So while indulging in this dish you can reap the benefits of health! Artichokes contain vitamins which include vitamin C, thiamin, riboflavin, niacin, folate, vitamin B-6,B-12, A, E, D and vitamin K. They also provide minerals such as calcium, iron, zinc, sodium, potassium, manganese, phosphorus and zinc.

Method:

2 Organic Artichokes

4 dates finely chopped

5 strips of Bacon - or more if you like - Paleo - sugar free, organic

sea salt

fresh ground pepper

ghee (or grass fed butter if you can tolerate dairy)

1 lemon

extra virgin olive oil

Instructions for cooking Artichokes:

Cut of the tips of the petals, and slice off the top of the artichoke, as well cut off the excess stem so the artichokes can sit straight up. *You will need a good kife to do this, a chef knife or a serrated knife will do the trick.

Rinse the artichokes

Set up a pot with some water, and aromatics I used lemon and a bit of extra virgin olive oil in the water, as well I sprinkled a bit of sea salt and fresh pepper over the artichokes. Then Place the artichokes in the pot.

Steam the artichokes by covering the pot. Bring to a boil and reduce heat to simmer. Cook for 25 to 45 minutes or until the outer leaves can easily be pulled off.

Instructions for preparing date and bacon Topping:

In a pan toss in the chopped dates, and chopped bacon pieces, render slowly to assure the bacon does not burn. Once cooked put to the side until ready to top artichokes.

Plate and top, serve with a side of lemon, and melted ghee and or grass feed butter for dipping if you so choose! You can also serve as a dipping sauce the Primal Kitchen avocado honey mustard.
